Method

  1. Boil and mash: Pressure cook the potatoes, peas, and cauliflower until soft. Mash them lightly and set aside.

  2. Sauté the base: Heat butter on a tawa or pan. Add onions and sauté until golden. Stir in ginger-garlic paste and cook until aromatic.

  3. Add tomatoes & spices: Mix in chopped tomatoes, Amrit Girnari Pav Bhaji Masala, turmeric, and chili powder. Cook until the tomatoes turn mushy and the masala releases oil.

  4. Combine vegetables: Add the mashed vegetables and capsicum. Mix well, adding some water to adjust the texture. Let it simmer for 10–12 minutes for the flavors to blend.

  5. Toast the pav: Slit the pav buns, spread butter, and toast them on the same tawa until golden.

  6. Garnish & serve: Top the bhaji with a dollop of butter, coriander, and a squeeze of lemon. Serve hot with the buttered pav!
